The palate is local, uncompromisingly Faroese. The young avant-gardes at KOKS use Faroese produce, both coarse and fine, ancient and modern, always keeping an eye on sustainability, leaving the hills that bring forth the good fruit to flourish. At KOKS, you have to keep an open mind while enjoying dishes made from ingredients such as lamb brain, sea urchins, and weeds—all of which are found on the islands and in the local waters.
